Oye! I’ve been recovering from a nasty bout of food poisoning. I am feeling much better though. For a few days all I wanted to do was sleep. So that’s what I did. Work and sleep.
Anyway, many of you had concerns as how the hubbs and I could have eaten off of $50-$75 a month. I am not too sure myself. It really was a silly number, but we didn’t know any better. We adjusted our budget after our first year. Though, for a long time we ate off of $100 per month. We ate a lot of canned fruits and veggies, frozen chicken, Ramen, Mac and Cheese, etc. We also were well fed by our many family members on a regular basis.
I did cook, but it wasn’t from fresh whole ingredients. It’s only been the last two years that I’ve aimed to eat organic and whole foods. Way back then all I cared about were calories or points. If I could eat 2 Weiner Wraps and Mac and Cheese, and stay within my calorie goals, I was set.
Our budget is now $200.
I now only buy fresh fruits and veggies, with the occasional frozen peas and carrots, and berries. I only buy organic dairy and all natural packaged products. And if you read last week’s meal plan you would notice that I am switching to all natural/grass fed/cage free meat. It is definitely more expensive for us to eat now! My husband blames it on me. I think he’s right. 😛
This week’s Meal Plan
Monday (What I had planned and what I actually ate are two different stories, I’ll share with you what I ate.)
Breakfast: Slice of bread with PB
Snack: Granola Bar
Lunch: Bagel with Cream Cheese
Snack: Granola Bar
Dinner: Chicken Noodle Soup
The only thing I could even think of eating were bland foods. Even this stuff didn’t settle well.
Breakfast: Peaches, oatmeal, brown sugar
Lunch: Sweet Potato, shredded cheese and sour cream
Snack: Cous Cous, refried beans, salsa and cheese.
Dinner: Chicken Stir Fry, brown rice, 1/2 egg roll
My appetite came back!! YAY.
Breakfast: Cereal, Berries, Milk
Lunch: Left over stir fry and brown rice.
Dinner: Paula Deen BBQ Fish Recipe and Corn on the Cob
Breakfast: Oatmeal and fruit
Lunch: PB & J Sandwich and Spinach and Romaine Salad
Dinner: Enchiladas. Beef for the husband, veggies for me
Breakfast: Cereal, berries and milk
Lunch: Left over enchiladas and spinach and romaine salad
Dinner: Cold Grilled Chicken Sandwich on the road! The hubby and I are going to Seattle for a couple nights to check out some baseball games and chillax. I’ve even planned the weekend meals! See below.
Breakfast: Egg sandwich and fruit (We’ll be camping so I’ll bring along my little skillet)
Lunch: Eating at Safeco feild. They have a new organic vender!!
Dinner: PB and Jelly (and chips, says Josh) (and fruit and veggies, says Shawnee)
Breakfast: Egg Sandwich and fruit (so nice, we’ll do it twice)
Lunch: Tuna Sandwich
Dinner: PB and Jelly on the road.
